A Simple Side: Roasted Potatoes

This is one of the easiest and tastiest sides to make, when you're out of ideas. It's quick to make and requires minimal ingredients, so you can whip it up when in a pinch.

What you need:

Several potatoes, depending on how much you want to make.
Olive Oil


Wash the potatoes well because you will be leaving the skins (the picture above was taken from a time I did not leave the skins, this recipe is great either way.) Chop into small cubes.  Place them in a flat cookie sheet style pan.  Generously drizzle with olive oil, sprinkle with salt, pepper and oregano.

Place in the oven at 400ยบ and cook for about 20-30 minutes checking on them every 10 minutes to toss (so they get evenly roasted).

Serve in separate little dishes if you are having a large gathering, or put them in one larger serving dish for all to dig in.

These go great as a side for meaty dishes or as a filling vegetarian addition. They are also great for picnics and barbecues in the summer. With Thanksgiving nearing, I find this to be a very quick and easy filler for your meal.

  1. Roasties are a staple for big dinners in my family. I also love doing roast carrots, turnips and parsnips in the same way!

    1. I've roasted brussels sprouts this way but haven't really tried the others. I generally put parsnips and turnips in stews. I will have to try them this way!
