Vegetarian Stew & Cornbread


I love one pot meals. Last night I made a hearty, vegetarian stew filled with vegetables from the garden. It turned out great. 



I started by sautéing onions in olive oil and then added some spaghetti sauce I made the night before (love using leftovers!) 




I then filled the pot, more than half full, with water. I let that simmer for a coupe minutes and then added a cup and a half of barley. I rinse my barley before cooking.




I let the barley cook on medium for about fifteen minutes and then started adding vegetables depending on how fast they cook. I started with rutabagas and let those cook for a good half an hour before adding carrots and parsnips. I added the collards and potatoes last. I seasoned with salt, pepper and oregano.








This is one of my favorite dishes because of how easy it is. You toss all the ingredients in the pot and let it simmer for as long as you need. If the veggies are soft but you want to wait to eat it, turn off the element and let the stew sit, it will only taste better.

It tastes great with cornbread. I make a fairly easy one with buttermilk. I used this recipe.
