Ingredients:
3 beets
2 handfuls of green beans
Vinegar (something clear: white, rice, apple cider)
Olive oil
Salt
Pepper
Directions:
• Boil the beets until soft (this will take about 45 minutes, so do them ahead).
• Saute the beans in olive oil until they start to get soft. Set aside to cool.
• Peel the beets by hand (once they are boiled the skin just falls right off) and chop into cubes.
• Put the beets and green beans in a bowl, and toss with olive oil, vinegar, salt and pepper.
• Use lemon slices to garnish

okay, is it weird that i am in my twenties and still have never had beets? your salad is making me want to change that. looks delightful :)

ReplyDeleteI recently discovered your blog, and find it very charming. I just wanted to let you know that I tried this recipe, and it was GREAT!!! I made the dressing on the side using lemon juice, a small splash of vinegar, olive oil , slat and paper and a bit of garlic.
