I Heart You Strawberry Apple Pie

An easy way to update a pie to suit a particular mood/event/holiday is to use specific cookie cutters to decorate it. It's a no brainer.

This one turned out adorable and perfect for a sweet valentine treat.

I use a pie dough recipe from a vintage copy of Better Homes & Garden cookbook. 


For the pie -

2 cups flour
1 teaspoon salt
2/3 cup butter
6 to 7 (I always end up using more) tablespoons ice water

For the filling -

2 sacks of frozen strawberries
3 apples (peeled and sliced)
1/4 cup sugar
1/4 cup flour
Sprinkle of cinnamon


• Set oven to 400º 
• Mix the flour and salt with a fork
• If you are using a food processor, pulse the flour and butter until the butter resembles pea sized granules. If by hand use a pie cutter for this. 
• Add water and mix
• Press the dough with your hands (do not knead!)
• Form two balls and place in sacks in the refrigerator for at least 30 minutes.

While the pie dough is cooling make the filling by mixing all the ingredient together. Set aside. 

• Roll out one of the pie doughs and form into your pan. Refrigerate.
• Roll out the second and cut your heart shapes. Place on parchment paper on a cookie sheet to refrigerate.
• Fill your pie shell with the strawberry/apple filling. Arrange the hearts on top. 
• Place in oven at 400º for about 15 minutes, lower to 375º and cook for another 30 minutes.
