Veggie Filled Brunch


I made a tasty brunch for myself, out of the blue, last week and am just coming around to sharing it. Life has been happening, and blogging hasn't been a part of that happening for a couple of weeks now, but here we are again. 

My moments of craving are funny, and mostly vegetarian lately, as I mentioned before when I shared this veggy pasta recipe I made for a quick lunch. 




This recipe is pretty basic and mostly inspired by some ingredients I had in my refrigerator that had to be used up. 

Ingredients:

Brussels sprouts
Shallots
Olive oil
Salt, pepper and a dash of cayenne pepper
Turkey bacon (optional, I didn't put it in this time, but I think it would taste really great with it)
An egg (or several)


Directions:

• Thinly slice the brussels sprouts and shallots
• Toss the shallots in olive oil sautéing lightly (if you are adding bacon, shop into small bits and go ahead and toss it in now). Then add the sprouts. Cook until they seem tender but the color is not lost.  
• Season with salt, pepper and cayenne. 
• Set aside and fry your eggs in the same pan. I did a sunny side up, an over-easy would be delicious as well.
