For some time now my husband has wanted me to share my pancake recipe. I didn't think it was relevant because I have been making it since I was allowed in a kitchen and therefore assumed it was a literal no brainer. Well, a few weeks back a friend of mine explained that most people don't make their own pancake mix and therefore I should share my recipe. That was all I had to hear.
My point isn't to tell the pancake mix buyer reading this that he/she is a terrible person, but to share the easiest recipe of all time as inspiration for all. If you do make your own pancakes, I see you rolling your eyes, get over it.
I had to make an effort to think about the ingredient quantities for this recipe, since I just wing it. Groggy morning me had to make a concerted effort to focus, so you're welcome. Hah.
Oh also, I usually make these wholewheat but I ran out of wholewheat flour on this particular day and made them with a blend of white and barley flour. I use the same amounts regardless of the flour I use.
Ingredients:
2 eggs
2 cups of milk
About 2 cups of flour (whole, white, barley, or a mix in whatever quantity you want for each). The reason I say "about" is because I basically want you to start with 1 cup of flour and as you mix and feel the batter add more. If you feel you added too much just add some more milk)
2 teaspoons of baking powder
Melted butter (about 1 tablespoon)
Directions:
• Whisk the eggs then add the milk and continue mixing.
• Add the flour and mix some more. Once the desired consistency has been reached add the baking powder. You know you have enough baking powder if the batter bubbles a little.
• Meanwhile let the butter melt and pour into batter. Mix it well and there you have it.
• While cooking your pancakes make sure to let the pan heat up before starting, to achieve the desired golden outer crust. I'm sure you all know what to do beyond this point, so enjoy!

ReplyDeleteThese look awesome! I'm totally guilty of buying pancake mix since my brain absolutely doesn't work in the morning and the less I have to think before I eat, the better. But I WILL get my husband (who is a total morning person) to make these for us one day!
