Whole Wheat Banana Muffins

I love banana bread but sometimes I want something a little different. Not that these muffins are much different than banana bread, conceptually, but their serving size nature does keep things a little easier.

They are pretty quick and easy to make and would make a perfect breakfast on the go since there is no sugar in them. I also add walnuts for added texture, if I have them lying around.

What is with over sugaring banana desserts anyways? Those things are chock full of sugar to begin with. 

I used this Martha Stewart recipe as a starting point for my own, so if you want the sugar version, check that one out. Or, go for about 1/4 of a cup of brown sugar, that will add a little sweetness without making each bite overwhelming.

Ingredients:

6 ripe bananas
1/2 cup melted butter
1 large egg
2 cups whole wheat flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup sour cream or greek yoghurt
1 tablespoon pure vanilla extract
1/2 cup walnuts (optional)

Directions:

• Preheat oven to 350ยบ and line a muffin pan with liners.
• Mash the bananas with paddle attachment of your mixer. Add oil and egg and continue beating. Reduce speed and add flour, baking powder, baking soda, salt; beat until smooth. Add sour cream and vanilla and beat until combined.
• Fill the muffin tin using an ice cream scoop.
• Bake until tester comes out clean, about 20 minutes.

    1. I am the same way! It doesn't seem to make sense but that's how it is I guess :) Glad to know I'm not alone- usually I get weird looks when I say I hate bananas!

  5. Aren't banana muffins great? I used to make them every few weeks, but got out of the habit. Though, mine have to be gluten-free because my boyfriend is allergic to wheat (and walnuts). He goes out of town for work every few months, so the next time he does I'll have to try your recipe out. It looks really good.
